Easy Dinner: Carolina Gold Barbecue Chicken Salad

As I mentioned on Instagram, Jeff does the majority of our cooking – he took over when the kids were much smaller and never really returned the reigns (fine by me), but I still love to share easy recipes where I can! We didn’t have dinner plans last night and I was heading to Trader Joe’s anyway, so I picked up a few things and it turned into a super filling and delicious salad that’s perfect for weeknights and for leftovers.

Carolina Gold Barbecue Chicken Salad (serves 2)

Ingredients

  • 4 Chicken Breasts
  • 1 bottle Trader Joe’s Carolina Gold Barbecue Sauce
  • Trader Joe’s uncured bacon, cooked and sliced (we like to bake ours!)
  • Blueberries
  • 1 Bag of Trader Joe’s Herb Mix Salad
  • 1 ball of Burrata Cheese
  • Cucumbers, sliced
  • Olive oil (to drizzle for dressing)
  1. Place chicken breasts in the crockpot with 3/4 of the bottle of the Carolina Gold Barbecue Sauce. Cook on low for 6-8 hours or on high for 3-4 hours.
  2. After 6-8 hours, shred the chicken with 2 forks and leave in crockpot while you’re preparing the salad.
  3. To prepare the salad, toss the Herb Mix Salad (our favorite!) with the blueberries, sliced bacon, and sliced cucumbers.
  4. Plate salad onto 2 dishes and add 1/2 of the ball of Burrata to each salad. Drizzle olive oil on top.
  5. Add your preferred amount of shredded chicken on top and enjoy!
This made enough chicken to have plenty of extra for Jeff’s lunch the following day. Would be great in a wrap!
